My mother invented this recipe one evening when my father brought home unexpected guests. She grabbed some cans from the pantry in order to stretch a pound of hamburger into a meal for company. We enjoyed it often during my childhood, and my mother’s concoction is one of my favorite comfort foods.
Proportions of the ingredients are flexible.
INGREDIENTS
- 1 pound ground beef
- 1 tablespoon chili powder
- 1 can pork and beans
- 1 can corn, with liquid
- 1 can tomato soup
- Salt and pepper to taste
INSTRUCTIONS
Brown the ground meat in a large skillet. Add remaining ingredients and stir well to mix. Simmer at least thirty minutes. Serve over rice.
